Ahhh, the punctuation police! Technically, it was my friends (multiple not possessive) birthday dinner. It’s the first time the three of us have been out together in a year and a half, so we celebrated all three missed birthday celebrations.

And here I got my panties in a wad thinking you were accusing me of trying to get someone else to pay for my lobster. I’m glad we cleared that up.

That plain apostrophe mistake is hugely popular here. It makes you guess rather than take it as it is. It seems worth clarification sometimes.

To my knowledge (I'm not an expert though ) it's absolutely fine that the one who celebrates a birthday invites guests and treats them. And the guests bring gifts.

Traditionally this is the way it normally is, you have a point. If it's my birthday, ppl who join me are at the eatery/restaurant and I foot the bill..presents to me are optional

A few days ago, my DW bought a to-go dessert special at a local restaurant. They called it an apple pie roll, and served it with a side of vanilla or caramel ice cream.

When I looked at it, the restaurant had used an eggroll pastry wrap around apple pie filling. After my initial disgust with China messing with something as American as apple pie, I realized the genius that this 100% American restaurant had prepared in a product that was better than a Mickey D's fried apple pie.

I went to my search engine du jour to see if anyone had come up with the idea yet commercially, and the first hit was a published recipe for apple pie in an eggroll wrapper was for use in an air fryer. Lightbulb moment! Subsequent hits revealed there are dozens of pork/chicken/shrimp DIY air fryer eggroll recipes online, many calling for pre-chopped coleslaw cabbage as the base for the fillings. I can't really eat the real thing, since the Chinese take-out places in our area all use a soy-based sauce in the eggroll filling that blows my sodium budget away.

Long story short, two regional supermarket chains sell eggroll pastry wrappers. We plan to experiment with making our own traditional, non-traditional, and dessert eggrolls in the air fryer later this week to see if we can concoct something edible. I'm really curious how Mexican stuff will fare in an eggroll shell.

Yes, there will be pictures if anything turns out worthy of sharing.....

Last night was my mom's 70th birthday so my wife & I did a little tasting menu paired with wines. Here are the foods & my first attempts at food photography...please be kind. Oh I did not shoot the wine for some reason. LOL

First course: Home made blini with lemon dill yogurt, smoked salmon & caviar paired with Champagne.




Second Course: Poke with a sesame rimmed martini glass. Endive & wonton chips we fried. Paired with Sauv Blanc




Third Course: Bacon & crab stuffed lobster, roasted asparagus with shaved parmesean & balsamic reduction drizzle. Paired with Chardonnay



Dessert: Cupcakes from a local place..the owner won Cupcake Wars. We had snickerdoodle, Triple Chocolate, Berry Cheese Cake, Pink Champagne, & Limonata flavors. The cookie tray were short breads with chocolate, and my wife hand made Bailey's Chocolate truffles. Most had coffee with this stuff




That was a hell of a night. Mom was happy! LoL
