Salad and bread!
Arugula with pepperoncini, onions and tomatoes seasoned with evoo, red wine vinegar, s&p and some good parmigiano reggiano. Grilled whole wheat Syrian flatbread, grapes for dessert. |

Haddock on the right that I caught in September at Hampton NH.

The chicken patty and bun were aligned well, but they just tossed shredded lettuce all over the wrapper and missed the insides completely trying to slobber on the mayo. No way could I pick it up without making a lettuce mess and getting my hands slimed. I'm so bored in my involuntary retirement right now that I might try to build a McRobot that can assemble a sandwich better/faster than their kitchen staff just because.....

Moussaka and béchamel!
Recipe from Nikki Glekas on yt. Layers from the bottom: potatoes, zucchini, meat sauce, eggplant, béchamel. Plated on more béchamel. Moussaka is one of my all-time favorites. It requires alot of prep work so I make it only once per year. Worth the effort! Fresh mango for dessert. |

Turned out really well 😋
- Pan fried, crispy skrimps then tossed w/ honey glaze; topped with ‘candied’ walnuts…and of course a tasty brew + bubbly H20 to wash it all down

Linguine with anchovies and sardines!
Inspired by Vincenzo’s Plate on yt. So good! Small fish are tasty and go well with pasta. Garnished with fried breadcrumbs. Grapes for dessert. 2 anchovy filets 1 can sardines 60g pasta. I prefer spaghetti but had linguine on hand. 1/2 medium onion, diced 1 clove garlic, minced 2T breadcrumbs, fried in EVOO EVOO, s&p and red pepper flakes Fry breadcrumbs, reserve. Cook anchovies, onions and garlic in EVOO, anchovies will dissolve. Add pepper flakes to taste. Drop pasta. Continue to cook veggies as pasta cooks. Transfer cooked pasta into saute pan with onions, add sardines and 1/4c pasta water. Toss and mix well. Plate pasta and fish, garnish with breadcrumbs and more pepper flakes. Enjoy!
