“Sicilian pasta with no name”
Inspired by Aden Films on yt. Garlic and anchovy filets fried in oil with tomato passata, blanched arugula and smoked mussels. Garnished with parmigiano reggiano, fried breadcrumbs, freshly ground black pepper and evoo. This has great depth of flavor! I used fettucine because it was on hand. The chef in the video used ditalini, a small soup-type pasta. I am partial to spaghetti and would choose it over others for this item. I used passata and arugula for the same reason, the chef used canned tomatoes and a leafy green from his garden. I added mussels and a small amount of crushed dried rosemary. Grapes for dessert. Baked boneless chicken breast, baked potatoe slices (same temp and time as chicken... less work), nuked mixed veggies.. and my 1/2 gallon of hot sauce....it's getting low !
