I had honestly never heard that term either. The word zabuton itself means seat cushion in Japanese which I thought was a bit strange. Not sure whether you've ever seen Japanese sumo wresting on TV but after the match sometimes the fans will throw zabuton into the ring if the highly ranked "Yokozuna" is upset by a lower ranked sumo wrester.

Now back to the meat... I've eaten Denver steak however but it wasn't Wagyu grade. That's the reason I suggested you try it so you can report back.
So we get to the restaurant and they had neither the Wagyu Zabuton nor the tallow aged NY strip on the menu. I ended up getting the "regular" NY strip and wife got the petite tender, both of which were very good. But I still hate when restaurants change their menus frequently and don't update their websites with the updated menu.

The potato lasagna made in main oven with potatoes (of course) beef steak that was pressure cooked separately in Ninja then added to main cook tray with cheese, blended tomatoes,marscapone,peppers with dill, basil,lots of garlic and dried mixed herbs oh and three spoons of avocado oil.

And the Inglehoffer horseradish I can catch a glimpse of off to the right of the photo.
I generally don't do sauces with my steaks if they're cooked and seasoned appropriately. I do like my horseradish though, particularly with a good prime rib.

Now about that antique looking remote.... lol.
