I do something similar, but without the water bath. I do my steaks/roasts reverse sear. So, they go in the oven at 200F until they are basically done, then on the grill to add the flavour.
I like my steaks between about blue rare and rare. Will be done perfect every time, and nearly the whole steak is the same doneness. |

We were. I was just referring to the fact that grilling/BBQing has a "fun factor" to it. The social aspect is what makes it so appealing. All that goes out the window with a meat boiler.
