I had a meatball parm empinada, from a new local restaurant that started out as a highly-rated roadside food truck. Although it sounds like a culturally-confused concoction, it somehow makes sense on Columbus Day when we celebrate an Italian captain on Spanish ships landing in the Caribbean.....
