Wife baked the 'but my brother caught last weekend, along with some wild rice mix and nopales. I left all the doors open when I came into the house from picking the nopales. Topped with yellow limes I picked while I was out there.

Last of my chicken brats on my BabyQ. Somewhat bland but the addition of chopped red onions and pickled red cabbage came to the rescue.

Big cheeseburgers: red onions, oatmeal flakes, egg and Sriracha sauce. Provolone and Swiss cheese.

It’s back!

Tabbouleh, one of my all time favorite items. With Iraqi flatbread and fresh apricots.

1 bunch flat parsley, stems removed
1 bunch fresh mint, stems removed
1 tomato, diced
1 bunch green onions, chopped
1/4c dry bulgur, cooked
1 lemon, juiced
EVOO
salt
Black pepper
Sumac
Kalamata olives and Pepperoncini, optional and not traditional (I like them!)

Also can add crushed roasted almonds, diced cucumbers or chickpeas.

Makes 1 large entree portion or 2 good-sized side salads.

Chop it all up, mix it up and serve!

Rice Fusion - Fried jasmine rice/quinoa combo (sesame oil, fresh garlic, soy sauce, authentic Vietnamese seasoning)
Veggies - Roasted zucchini with scallion/onion (combined w/rice dish)

Yesterday, we went to the one supermarket here that usually has cod, but they had none. I was bummed. Maybe next weekend.
