My girlfriend is the chef in the house! I asked her and here is how she did it!

Super thin sliced potatoes, béchamel sauce with shallots and herbs poured on the potatoes and then topped with cheese. Baked (all together) at 400 covered for 45 minutes and then uncovered for an additional 30.

Love this. Guanciale, onions, garlic, parmesan, s&p and red pepper flakes.

Onions, garlic and pepper flakes are not traditional. I added them to “make it mine”!

Arugula with tomato, onion, pepperoncini, olives, anchovy, parmesan, EVOO, lemon juice and s&p. With grilled flatbread. Fresh orange for dessert.

Looks great. I never used pepperoncini before. I take it that the Scoville rating is on the low side, just enough for a little tingle on the tongue.
