Forgot to take a pic of the chicken thighs on the grill, but here's tonight's munchies.
Salad is romain, tomatoes, red onion, cucumber, grilled chicken (Shawarma style), and Tzatziki-like dressing. An ear of grilled corn with seasoning

My DW was staring at a bowl of leftover cooked/shredded chicken last night, wondering what to do with it. We worked as a team to make what my family has incorrectly called kasha for several generations. Throw cooked rice, cooked shredded turkey/chicken, and a handful of peas/corn/diced carrots in for color into a pan. Add garlic powder and butter...you can't use too much butter (or margarine/oil). Mix, simmer, and enjoy a meal that is sure to keep vampires away for days.
 I did a batch last year using riced cauliflower instead of rice to save on the carbs. It came out good as well. Just wish that I knew what the official eastern European name for this dish is.....
