My Recipe:

As I have been cooking and grilling over the years, the natural progression is to create my own Marinades. 🙂
This one requires a lot of ingredients but is sooooo worth it!
I don't really measure I just go by my preference. So you can season to taste:

For these 10 Chicken Thighs:
12oz OJ
Garlic salt
Onion Powder
A tsp or so of the following Dry:
Thyme, Pepper Mix, Allspice, Cinnamon, Parsley, Nutmeg, Cloves.
1 Tbspn sugar
Qtr cup of Olive Oil

Combine all ingredients and shake vigorously in a bottle! Pour over chicken in gallon sized zip lock bags.
Refrigerate for at least 6 hours.
Now you can grill, bake or pan fry to your desired doneness.

You can't find a jerk marinade? I shouldn't be surprised I guess, but it is strange to me the things you don't have in America.

When I was in Chicago I went into numerous pubs (or at least places they had the nerve to call a pub) and inevitably they didn't serve nachos or they didn't serve wings, and sometimes, they served neither. It was mind boggling. These are staples that should be at the heart of every single establishment that calls itself a pub.

You're overlooking my fur-hatted capacity for the cold...that and my love of Scotch which keeps me warm inside. Even thaws my frosty little heart from time to time and I do something nice.

Evidence of this can be seen when I pay a compliment to a member here. It might be rare, but it is always genuine when it happens.

Serious question for those of you in the south - how do you keep geckos and lizards away from your grill?
It's one of those things that seriously bother my peace of mind - both the surprise of finding one under the grill, and the germophobe side of me on how to effectively clean the grates after discovering one of those little nuisances

So not a big deal? Just wipe off the grill grates, curse at the geckos a couple of times and be done with it?

Up north, the cold and climate overall has been such that I've never had to think about such a possibility

I grilled a thinnish steak on the BBQ at very low heat. Came out decent. Although the best is when we do a reverse sear on a good t-bone from a butcher in our oven.

Wife does a home-made "south asian" marinade for chicken, which comes out great on a charcoal BBQ - juicy, tender and flavorful (not too spicy).

I find charcoal hard to control - sometimes food is a bit singed or could be a bit under-cooked in colder weather. Compromise is the intense smoky flavour.

Grill Rescue to clean?

I just bought one with the scraper, and 2 extra cleaning heads. We'll see if steaming really works.
