Not Familiar with tire sizing, What fits on the 2er

Im between Avant Garde m359s or 580s but I just dont know what size to order...

I would prefer 19s but I am concerned with rubbing, I do want to lower it ~1/2" so maybe I should stick with 18s or will the 19s fill the gap adequately without lowering?

The next thing is how do I determine the fitment? (is offset the right word?) I would like to keep the staggered look but I also would like to bring my wheels out flush with the body without the use of spacers..Is this possible?

Lastly I would like todo this without "stretching" the tires...

19x8.5 et 35 and 19x9.5 et45 fit perfectly with a 225/35/19 and 255/30/19
18x8.5 et 35 and 18x9.5 et45 fit perfectly with a 225/40/18 and 245/35/18

I'm on H&R springs and there is plenty of inner clearance. I will be slamming it soon on coilovers and not expecting to get any kind of rubbing either.

+1. We also have a few 18" customers run 9.5 ET45 or ET50 with 255/35/18.
